Fish Stew

Ingredients

  • 6 Tblsp Olive Oil
  • 1 medium onion, chopped
  • 5 garlic cloves, chopped
  • 2/3 C parsley, chopped
  • 1 14 oz. can chopped tomatoes
  • 8 oz. clam juice or shellfish stock
  • 1/2 cup dry white wine
  • 1 1/2 lb. fish filets ( use firm fish like cod, red snapper or sea bass) cut into 2" pieces
  • 1 tsp Montreal seasoning
  • 1/2 tsp dry thyme
  • Optional: shrimp or scallops

Preparation

  1. Heat olive oil in a thick bottomed pot over medium heat. Add onion and sautee until clear. Add garlic and sautee a minute more. Add parsley and stir for 2 minutes. Add tomato sauce and gently cook for around 10 minutes.
  2. Add clam juice, wine, and fish. Bring to a simmer until fish is cooked through and easily flakes apart -- about 3 to 5 minutes. Add Montreal seasoning to taste.
