1 1/2 lb. fish filets ( use firm fish like cod, red snapper or sea bass) cut into 2" pieces
1 tsp Montreal seasoning
1/2 tsp dry thyme
Optional: shrimp or scallops
Preparation
Heat olive oil in a thick bottomed pot over medium heat. Add onion and sautee until clear. Add garlic and sautee a minute more. Add parsley and stir for 2 minutes. Add tomato sauce and gently cook for around 10 minutes.
Add clam juice, wine, and fish. Bring to a simmer until fish is cooked through and easily flakes apart -- about 3 to 5 minutes. Add Montreal seasoning to taste.
